Ever wanted to break bread with Simon Whitfield, Paula Findlay and Cody Beals?

 

Well, here’s your chance – we’re saving a seat at our (virtual) table for you.

 

Join them and the TTF Community to laugh, chat about “Campfire Tacos”, hear some private stories, and yes, to make your own tacos alongside Chef Cody, Chef Paula and Chef Simon!

 

This will go down on our Facebook Page this FRI MAR 19 at 6:00PM EST and will be the second of our “TTF EXPERIENCES” in 2021!

 

This is guaranteed to be a fun and feel-good time and we wanted to show you some (much deserved) love by inviting you to this unique, virtual event!

CODY’S TACOS – You will need:

 

Protein: Beyond Meat or TVP as ground beef substitute.

 

(From the TTF: For those who aren’t vegetarian / vegan, you can use ground beef, chicken, steak or even salmon, shrimp or any other sturdy white fish)

 

Veggies: Sautéed onions, peppers, mushrooms…. or whatever you have in the fridge!

 

Toppings: Sharp aged cheddar cheese, sour cream, lettuce, tomatoes, salsa (mango salsa recipe included below), guacamole (easy recipe included below) or whatever you love!

 

Shells: Soft corn or wheat tortillas, hard corn shells, whichever you prefer.

FRESH MANGO SALSA – To make this easy mango salsa recipe, you will need:

 

Fresh Mangoes: Nice and ripe and diced to your desired size.

 

Red Onion: Peeled and finely diced.

 

Jalapeño: For a milder salsa use just one pepper, seeded and diced. Or for a spicier salsa, feel free to add two peppers.

 

Fresh Cilantro: Finely chopped.

 

Fresh Lime: Juice of 1 lime.

 

Prep all of your ingredients: The size of your dice is completely up to you. Feel free to make your salsa as chunky or finely chopped as you prefer.

 

Combine ingredients: Toss everything together in a mixing bowl until evenly combined.

 

Taste and season: Feel free to add in some salt and pepper or also add in extra lime juice or cilantro if desired.

 

Serve: Then dive in! Or refrigerate in a sealed container for up to 2 days!

EASY GUACAMOLE – To make this easy guac you will need:

 

Avocados: Nice and ripe, peeled and mashed.

 

Red Onion: Peeled and diced.

 

Tomatoes: Diced (preferably Roma tomatoes).

 

Fresh Cilantro: Finely chopped.

 

Jalapeño: For a milder guac use just one pepper, seeded and finely diced. Or for a spicier guac, feel free to add two peppers.

 

Fresh Garlic: 2 cloves minced.

 

Fresh Lime: Juice of 1 lime.

 

Salt: To taste.

 

Prep all of your ingredients: The size of your dice is completely up to you. So, feel free to make your guac as chunky or finely chopped as you prefer.

 

Peel and pit avocados, then mash them with a fork.

 

Combine ingredients: Toss everything together in with the avocado and mix until evenly combined.

 

Taste and season: Feel free to add in extra lime juice, salt or cilantro, if desired.

 

Serve: Then dive in! Pre-making your guac is not recommended, as it will not keep well.

This fun session will double as your chance to hang with some pretty cool triathletes and, of course, as an excuse to indulge in some tasty tacos!
